I love pictures! And I love doing creative things with my pictures so that I'll want to pour over them later. I did photography both in high school and later in university, and my husband took photography at NAIT before going into in the sciences. This doesn't amount to much other than the fact the we now fight over the SLR camera...
One of the habits I've developed is to decide before ever leaving how I'll capture my memories. Will it be a hard cover photo book? A scrapbook? A digital scrapbook? I decide before hand because I'm a very visual creature and the end product influences the shots I'll take and what I save or discard on a trip. For example, when we went to California with my mum last August, I knew I would be making a large photo book. So there were pictures I took specifically because I could see in my head how they would look in a layout. Like this:
I could see these pages in my mind when I made my husband take pictures of the giant letters outside Disney's California Adventure. You can't really see it, but we took turns posing by each letter.
Other times, I keep bits and pieces when I travel because I know they'll get incorporated into a scrapbook like this:

The red "Tower of London" piece at the bottom of the page was from the bag that came with the postcards I bought. It has a short paragraph on why there are always ravens at the Tower. (Legend says should there ever be no ravens, the White Tower will fall and a terrible tragedy will befall England.) I knew I was making a scrapbook, so I kept it.
Both photo books and scrapbooks have advantages and disadvantages. A photo book is crisp and clean and looks more professional. But there's no where to stick mementos and you lose the hand crafted touch of a scrapbook, where every page is different and engaging. Which is why I love to make both!
For this trip I've decided on a scrapbook. I think there may well be a lot of bits and pieces I pick up along the way and I haven't made a good scrapbook in a while. I already had the book itself, which I picked up cheap at Winners a while back (I think it was $6!) with no inclination what I would use it for. I pulled it out today and it was perfect! As I've been out and about I've also collected some unique papers and stickers so that when I get home, I'm all set to start creating!
